Nutritious & delicious gluten free pancakes with a twist!

What I love the most about this recipe is that it's super simple to prepare, cheap, protein packed and naturally gluten-free! It's also one of those foods you can prepare a load of in advance and keep in the freezer for when you need something healthy and fulfilling but don't have time to cook :)

This recipe is called Missi Roti and is a delicious & healthy alternative to chapati or roti that you find in Indian cuisine. It was recommended to me by Jackie Kearney, award-winning author of Vegan Street Food (PETA Cookery Book of the Year 2015) and My Vegan Travels (shortlisted for Edward Stanford Travel Writing Award 2018).

Jackie has been an avid member of Fit Body Fresh Mind for over a year and was a finalist of MasterChef in 2011 & a British Street Food Awards finalist in 2012... so she knows a thing or two about how to cook delicious food! And how to make it healthy! 

To make 6 pancakes:

  1. Soak 1 cup of lentils in water for approx 3hrs
  2. Rinse then blend with 2 cups of fresh water to make a smooth batter
  3. Finely chop 2-4 green chillies, 1 small red onion & small handful of fresh coriander
  4. Mix the batter with the veggies & add salt to taste (about 1 tsp)
  5. Add 1/2 tsp coconut oil to small frying pan & place on medium high heat
  6. Add 2 tbsp batter mixture & smooth to thin layer using a spatula
  7. Cook gently on each side for 3-4 minutes
  8. Repeat to make 6 missi pancake ‘roti’

Can be reheated or frozen as needed.

This is a meal in itself as it contains tons of protein, veggies & healthy fats but if you feel like combining it with something, pair it with a salad, a curry or head to Jackie's website for more healthy recipe ideas!
